Pot Roast

I took the instructions my mom gave me for roast beef and adapted it for a slow cooker. Depending on how much water you add, it can end up more like a beef soup/stew.

2-3 pounds roast (any kind)
4-6 medium potatoes (washed with skins on or peeled)
1/2 pound baby carrots
2 Tbsp onion flakes or 1 small onion
2 Tbsp beef bullion
2 cups warm water

Cut up potatoes. Place potatoes and carrots in bottom of slow cooker. Place roast on top of carrots and potatoes. Combine bullion and water. If using onion, place on top of roast; otherwise, add onion flakes to bullion mixture. Pour bullion mixture over roast and cover.

Cook on Low 6-8 hours. When done, sample juice and add additional bullion, onion, and/or water to taste.
